Who doesn't love to enjoy wonderful cake at Christmas time? I know that my family love these terrific Christmas Cake Recipes. One of them is for a family tradition that we celebrate every year. I hope you love these Christmas Cake Recipes as much as we do!

Baby Jesus Cake

This cake is made by someone in our family every year. We have a Christmas tradition in our family where every Christmas a chocolate sheet cake is made and it is Jesus' Birthday Cake. My mom started this tradition many years ago, because she was afraid that there was too much Santa...and not enough Jesus in our Christmas celebrations. Every year a cake is made. We have a little nativity that we put on the cake. We also have a candle on the cake. We all sing Happy Birthday to Jesus..and the youngest child in the family gets to blow out the candle. This was a very important tradition for my Mom and all of us (my sisters and their families), so that everyone celebrated the true reason for Christmas! Even though my Mom passed away on Christmas day, 2003, we still continue this tradition and will pass it on to our children and future grandchildren in her honor.

Chocolate Sheet Cake.

1 c. water, 2 sticks butter (melted), 4 tbsp. cocoa, 2 c. flour, 2 c. sugar, 1 tsp. soda, 1/2 tsp. salt, 1/2 c. buttermilk,, 3 eggs beaten, 1 tsp. vanilla, 1 cup chopped pecans

Bring first 3 ingredients to a boil. Mix flour, sugar, soda and salt together. Mix both of these along with the remaining ingredients until well mixed and smooth. Bake in sheet pan at 350 degrees for 30 minutes.

Chocolate frosting:

1 stick butter 4 tbsp. buttermilk 1 box 10X sugar 1 tsp. vanilla

Bring first three ingredients to a boil. Add sugar and vanilla. Spread on sheet cake while still warm. Sprinkle with pecans. We put pecans on only one side of cake, for those who prefer not to have them. Enjoy!

Melba's Rum Cake

This is a great Christmas Cake Recipe that my sister's mother-in-law, Melba brought to Christmas and Thanksgiving dinner every year. It is soooo delicious. We were always asking her for the recipe. One Christmas, she gave me a bundt cake pan with the recipe! I thought that was such a thoughtful gift. Here is the recipe for you!

1 box yellow cake mix (DO NOT USE MIX WITH PUDDING!), 1 pkg. instant vanilla pudding (dry), 1/2 cup water, 1/2 cup oil, 1/2 cup rum, 3 eggs, pecans.

Mix all ingredients with mixer. Grease bundt pan. Put chopped pecans in bottom of pan and some in the cake batter if you like. Bake for 1 hour at 350.

Glaze:

1 cup sugar, 1 stick butter, 1/4 c. rum, 1/4 c. water

Mix glaze and boil about 2 minutes. While cake is hot, punch holes in it and pour glaze over cake. Let sit until cool. Delicious Christmas Cake Recipe!

Caramel Pecan Cheesecake

My friend, Val brought this recipe to a Progressive Dinner that we had one year. I asked her for the recipe because it was so good!! There were many Christmas Cake Recipes there, but this one was by far the best! Enjoy!

2 8 oz. pkgs cream cheese-softened, 1/2 cup sugar, 1/2 tsp vanilla, 2 eggs, 1 graham cracker crust, 25 caramels, 2 tbsp milk, 1/2 cup chopped pecans

Mix cream cheese, sugar, and vanilla with electric mixer-well blended! Add eggs to mixture. Mix well.

Melt 20 caramels with milk on low heat. Stir frequently until smooth. Stir in pecans. Pour caramel mixture onto crust. Top with cream cheese mixture.

Bake at 350 for 40 minutes. Cool for 3 hours.

Top with about 5 melted caramels over sprinkled pecans.

Awesome Banana Pecan Coffee Cake

Here is a recipe that my sister, Krystal likes to make on Christmas morning!

1 C Sugar, 2 Sticks Margarine or Butter(I used unsalted butter), 1/4 C Milk, 2 Eggs, 1 Teaspoon Vanilla, 2-4 Bananas, mashed ( 1 used 3), 2 C Flour, 1 Teaspoon Baking Soda,

For the Topping: 1 Stick Margarine or Butter melted, 1 C Packed Brown Sugar, 1 C pecans,

Preheat oven to 350 Spray Pam into a 9x13 pan. Mix sugar, butter, milk, eggs, vanilla, bananas, flour and soda. Pour into prepared pan. Topping: Mix melted margarine, brown sugar and pecans. Crumble over top of cake and bake 30 t0 40 min

Pumpkin Bread

This pumpkin bread is soooo good. I love the way that it makes the house smell when I make it. I make a few of these each Christmas and give as gifts. They are so yummy and moist! Great for breakfast!

3 cups sugar, 1 cup oil, 4 eggs, 2 cups canned pumpkin, 3/4 cup water, 3 1/2 cups flour, 2 teaspoons baking soda, 1 1/2 teaspoons salt, 2 1/2 teaspoons cinnamon, 2 1/2 teaspoons nutmeg.

In large mjixing bowl combine sugar, oil, eggs, and pumpkin. Sift dry ingredients together and add to sugar mixture, alternating with water. Pour batter into a lightly greased bundt pan or into four ungreased one pound coffee cans, filing half full. Bake at 350 degrees for 1 hour. I hope you like this Christmas Dessert!
